1 tbsp extra virgin olive oil (EVOO) or oil of choice
1 tin lentils (rinsed and drained)
1 cup cooked rice (microwave rice for speed)
1 cup canned black beans (rinsed and drained)
1 cup frozen corn (microwaved or thawed)
Store-bought guacamole or mashed avocado
Salsa (optional)
Chopped fresh coriander (optional)
